Creamy Pumpkin Soup

Prep Time: 90 minutes
Servings: 

Ingredients:
4 cups peeled pumpkin, diced
½ cup chopped yellow onion
½ cup diced carrot
1 tsp chopped garlic
1 tsp cinnamon
¼ tsp fresh grated nutmeg
¼ tsp paprika (sweet or hot)
2 tsp kosher salt
4 cups chicken or vegetable stock
1 Bay leaf
2 tbsp avocado oil or ghee

Instructions:
Sauté dry ingredients for 10 mins. Add stock and simmer until tender (approx. 45 mins). Adjust seasoning, remove the Bay leaf, and puree until creamy.
